Classic No Bake Cookies With a Twist!

No Bake Cookie Bars

Here is an old fashioned recipe with a new twist… Classic No Bake Cookies made into bars!  My Mom made these no bake cookies a lot when I was growing up.  She liked this recipes because you don’t have to bake the cookies…just cook them on the stove and they are ready to either drop by spoonfuls on waxed paper (for cookies) or spread in a buttered pan for bars.  Their chocolaty goodness is hard to resist!

Classic No Bake Cookies!

No Bake Cookies

Cook Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 2 cups sugar
  • 3 tablespoons cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 3 cups quick cooking oats (uncooked)
  • 3 heaping tablespoons creamy peanut butter
  • 1 tablespoon vanilla

Instructions

  1. Butter a 10 X 8 casserole dish
  2. Combine the sugar, cocoa, butter and milk in a large saucepan. Bring to a boil and boil for 2 minutes.
  3. Remove from the stove and quickly stir in the peanut butter until combined.
  4. Stir in the oats and vanilla. Quickly pour into the casserole dish and let cool completely before cutting into bars.
  5. Note: To make No Bake Cookies, drop the mixture by spoonfuls onto wax paper and let cool.

    1. That’s a good question. Old Fashioned Oats and Quick Cooking Oats are both 100 % rolled oats. The only difference in them is the size in which the oats are cut — and the cooking time. When you need Quick Cooking Oats and you only have Old Fashioned Oats on hand, just pulse the Old Fashioned Oats for a few seconds in your blender or food processor and you will be good to go. You don’t have to buy a container of Quick Cooking Oats for one recipe.
      Now, this does not hold true for steel-cut oatmeal, also called Irish or Scottish oatmeal. This type of oatmeal contains unprocessed oats which are thicker, take longer to cook and contain more fiber than the rolled oats used for old fashioned and quick cooking oats. So, you cannot use the steel-cut oats interchangeably in a recipe that calls for rolled oats.

  1. Can you make these without peanut butter and what would you use as a substitute! I love the idea if making them squares!

    1. I love the squares too! You can alter this recipe slightly and omit the peanut butter. Just omit the peanut butter and omit the cocoa powder and substitute 1 cup of semi sweet chocolate chips. The chocolate chips will provide the creaminess and the chocolaty flavor we all love in this recipe. Enjoy!
